Coming by way of Cesar Bermudez at Finca Bet-el we have a world-class Geisha that is shocking in how pink it is.
Located in the Western Cordillera of the Colombian Andes located in the municipality of Calima Darién, Remolinos village, approximately 1600 meters above sea level. It's an invaluable agroecological zone, with volcanic soils, rains, and cool a climate.
Bet-el is well known for its advanced preparation of coffees and works with the master Diego Samuel Bermudez to implement some extreme practices to make extraordinary flavors and the Lake Reserve natural is no exception.
Working with two fermentations, the coffee first goes through 72 hours of carbonic maceration. The Bet-el team then adds lactic bacteria enriched with sugar (improving the metabolism) and let the coffee ferment for a further 72 hours. From there they take the lixiviate (liquid remaining from the first fermentation) and submerge the coffee in that water for 60 hours.
The coffee is then dried mechanically in a similar system to the Endestec ecoEnigma dryer which is completed in two phases. 24 hours of mechanical drying at a maximum temperature of 40 degrees Celcius and then solar dried (raised outdoor beds) for between 8 to 15 days.
The result is incredible and probably the definition of a pink cup of coffee.
Expect pink lemonade, lychee, and manuka honey.
