The coffee undergoes a 2-day fermentation in the cherry and a 1-day fermentation in the pulp. The coffee is then washed. Cusco has proven to be not only the cradle of Inca culture, but also the cradle of excellent coffee varieties. This is due to the soils, climate, geography and coffee heritage of producers in the warmest cities in the city. Edwin Quea belongs to the second generation of coffee farmers in his family and helped his parents work on the farm as a child. When he grew up, he decided to become a coffee cooper, prepared for it, and earned his certification as a Q-grader. This fact not only brought him the joy of achieving a goal, but also opened the door to the world of specialty coffee for him and his family.
