Diego is an absolute genius when it comes to advancing methodology in coffee processing. Its standard model for products uses carefully selected micro-bioorganisms to influence the coffee during fermentation rather than relying on naturally occurring yeasts. Instead of using standard anaerobic fermentation tanks, he uses precision bioreactors to ferment the product, measuring everything from time, temperature, pH and sugar content.
The impact you get from this type of industrial-level fermentation is definitely out there.
