At Cata Export, every coffee bean is handled with great care – and sometimes, that leads to entirely new ideas. One such idea is Chocoloco: a project devoted to the sweetest, most chocolatey coffees out there.

The idea actually came about by chance. While sorting coffee at the dry mill, the Cata team noticed some sublots that smelled unusually distinct – fruity, sweet, and chocolatey. Instead of setting them aside, they decided to cup them – and were amazed. From these “finds” came Chocoloco: not leftovers, but intentionally selected lots with real character.

To keep that special quality, Cata introduced a strict selection process: only washed coffees with clear notes of chocolate and sweet fruit make it into the series. Each edition receives its own number – starting with Chocoloco #1 – and stays true to its essence: chocolatey, fruit-forward, simply delicious.

Today, Chocoloco is much more than just a blend – it’s a creative project that showcases how exciting specialty coffee can be. And Cata Export continues experimenting with new editions – always aiming to create coffees that are innovative, sustainable, and full of flavor.

Processing

  • Harvest: Only the best, fully ripe cherries are selected.

  • Fermentation: 48 hours of controlled oxidation after pulping – for extra complexity.

  • Drying: Slow and gentle, to bring out sweetness, chocolate, and fruit beautifully.
