As a first-generation coffee farmer, Josefa Perez is dedicated to her craft. In the mornings, she and her husband work as harvesters on other farms before returning to their own farm in the afternoon to focus on their high-quality crops. Their farm is part of a cooperative in Huehuetenango, El Sendero, which gives many farmers access to the specialty market and helps support their family economically.

The batch we have from their farm, Q'antxabina (which sits at 1730 meters above sea level), is a washed coffee but with a really creamy element. With flavors of hazelnut ice cream, green apple, and oolong tea, this is an all-purpose roast that can find plenty of sweet spots.
