Alex Bermudez was born in Bolívar, Cauca, and is co-owner of Farm El Paraíso in the Piendamó district of Cauca. He came to the world of coffee through the influence of his brother Diego Samuel Bermudez, who discovered the subject through his studies in agricultural business management and developed a deep passion for it.


Although the family were not coffee farmers, they owned a farm where Diego was able to start his first coffee plantation — paving the way not only for himself but for his whole family, who supported him in this vision.


One day Alex got the opportunity to work alongside his brother and set aside his legal career. Thanks to Diego’s extensive knowledge, he began working with the national coffee farmers’ association, while Alex took on responsibility for the farm — with little prior knowledge of the subject. He put his trust in his brother’s teachings, and Diego passed on everything he knew without hesitation, so they could work hand in hand. Together they pushed beyond traditional techniques and even developed their own equipment to produce high-quality coffee.


Today Alex Bermudez is Quality Director of INDESTEC S.A.S, a family business whose mission is to improve the conditions for the production, processing and marketing of specialty coffee worldwide — helping both large and small producers. It is this family effort that makes Alex feel so grateful and fulfilled today. As he puts it himself, material things are not what matter — what he has gained through coffee is something else entirely: satisfaction, knowledge, a love of the work, family unity, and above all the opportunity to help so many coffee farmers.

Processing Protocol (Advanced Washed)

1. Selective Harvesting – Only fully ripe cherries are collected to ensure uniform sugar content.

2. Washing & Sanitation – Cherries are washed and sanitized to ensure microbial control.

3. Controlled Fermentation – Carefully monitored fermentation designed to enhance sweetness and aromatic integration.

4. Depulping – Gentle depulping to preserve bean integrity.

5. Multiple Washing Stages – Repeated washing refines clarity and stabilizes flavor.

6. Slow Controlled Drying – Gradual drying under controlled conditions to lock in sweetness and creaminess.

7. Stabilization – Resting period to allow moisture equilibrium and flavor maturation.


Patience pays off. Let the beans degas for 3–4 weeks before preparation.

Freshly roasted coffee releases a significant amount of CO₂ in the first few days. This gas can displace water during the brewing process and negatively affect the taste. Typical effects include:

  • Sharp or excessively sour notes
  • Gassy or hollow taste
  • Inconsistent quality from cup to cup

By letting the beans rest – also known as "degassing" – the CO₂ can gradually escape. This stabilizes the aromas and allows the coffee to develop its full, balanced flavor profile.
